That may sound large for a sample, but we recommend using a generous amount of leaf — and this gives you enough to try different brewing parameters: amount of leaf, brewing time, strength, and time of day.

Sous — liquorice root drink from Syria and Egypt

Sous

Sous takes around 14 hours to prepare, with fermentation in the sun followed by a slow infusion. I'm experimenting with drying it after fermentation instead, so it can be brewed in a few minutes, and adding ingredients to give it some 'cha chi'. This doesn't have a Brew number yet.

NooTea Brew 1 pouch

Brew 1

Brew 1, our first release. Preparation is complex though, due to the different infusion times needed for the different ingredients. I have a solution, though, I think. Need to do a little more experimenting. So Batch 1.2 will be a little different.

Brew 3

Brew 3 experimentation happening. Samples will be sent to some tasting panel members soonish. Not ready to add details to the site yet.

Acceptance onto the tasting panel isn’t guaranteed. Please tell us in detail about your coffee habits and any impacts you find coffee has on you — we send out samples where we think your feedback will be helpful to the development of a Brew.

We’re especially interested in hearing from people who experience coffee differently — including people who are neurodivergent, have ADHD, or find coffee inconsistent, jittery, crash-heavy, or strangely tiring. The panel is open to everyone.
