Our Ritual
What Makes Brew 2 Special
With the right brewing technique you can really make Brew 2 taste like a smooth, complex coffee. We've made a tweak to traditional Yunnan fermentation techniques for this nootropic (cognitive enhancing) coffee-replacing brew.

Yunnan Terroir
We pick our leaf from 100+ year old tea trees in an ancient tea garden in the mountains of Yunnan. High altitude, mixed ecology, mineral-rich soil, and deep roots result in leaf quality a league above.

Fermentation
Carefully controlled microbial fermentation over 3 months (sometimes up to 4 months) enhances the tea's natural nootropic compounds and develops deep, complex flavours.

Barrel-Aged Character
Aged in white oak rum barrels for 18 to 24 months, further smoothes out the flavour, so you can brew this strong without it going bitter. The ageing also intensifies the leaf's natural cognitive benefits.

Add Lion's Mane
Our processing of the leaf generates compounds for calm focus. We add in a little Lion's Mane for stimulation of nerve growth and memory support. Lion's Mane also enriches the earthy complexity.

NooTea Brew 2
I use 10–12g of leaf – a small handful, about 10× a regular cuppa. Brew with less water, for a shorter time, and reuse the leaves. It stays smooth and rounded, never bitter.


Hot
- • Generous handful of leaves (more than you'd expect)
- • Add a small amount of just-boiled water (~100ml)
- • Steep for 45 seconds, then strain
- • Re-steep 2–3 more times, adding 15 seconds each

Cold Brew
- • Handful of leaves + 200–300ml of water
- • Leave at room temperature for 2 hours to overnight
- • Strain and enjoy
- • Many people prefer cold brew for its calmer, steadier feel.

Latte
- • Generous handful of leaves
- • Add unsweetened soya or almond milk
- • Infuse for about 1 minute, then strain
- • Second infusion, steep for 2 minutes
- • We think Brew 2 works best with unsweetened soya or almond milk rather than dairy

I really recommend trying this 'lots of leaf' method. It makes for a smooth coffee-style brew. But small tweaks to amount of leaf, water, and time, can change the cup, so find what you like.
